I am wondering if it possible to stream audio from the pi musicbox TO an existing airplay device like a HomePod with multi room support. I’d like to know if I can use it to stream Soundcloud to my HomePod / AirPlay devices.

No, sorry. No support for that. Pi Musicbox outputs to directly connect speakers only.
