Idea is very simple - I have my kitchen radio/clock - mopidy, spotify & clock/date on led matrix.
It would be cool to grab current stream name and current track 1x every 60 sec or when current track is changing and display it on led matrix
I couldn’t find some project that this is done and working.

Which Mopidy projects did you look at? I would imagine they’d all use similar mechanisms to integrate with Mopidy. I answered a question on here about this just the other day, did you have a look at what is on here already?
I’m using my MQTT extension to push this information to a Lametric Time (which is a led matrix display)
